Six



Today is pay day which means I have about six jillion things to accomplish before I go to bed or maybe it just seems that way.  I have to make the menu for the week which then yields the shopping lists for Kroger, Family $ and any other store that I might need to visit to get everything on the lists.  I pretty much have the weekly shopping down to a science, so it really should not take me all that long to get it done.  Making the menu is the hardest thing as I try to bring variety and nutrition into our food foray for the week as well as eliminate boredom from the diet.  It is a challenge most of the time because Will's diet is a lot different than mine.  I like lots of spice and he likes none.  Trying to strike the balance between the two without busting the budget is a real test of my abilities.  Even so, I sometimes have monumental failures when it comes to dinner.  For example, I made chicken enchiladas for dinner last night.  I used no peppers or hot sauce and I used mild enchilada sauce.  Granted the brand of the enchilada sauce was not one that I have tried before, but the makers definition of mild and Will's are two different things.  He took a bite or two and declared the enchiladas too spicy for him to eat.  I thought they came out delicious, but then I am a pepper belly and Will is definitely not.  So therein lies the challenge at which most times I am successful at overcoming, but not always.  Now all I have to do is figure out what he will eat and I will also which will still fit in the budget.  So I better get to it or I will be at it much later than I need to be.

Will here:

I don't know what the makers consider MILD but it lit my mouth on fire. It would have destroyed my insides and given me indigestion something fierce.

I find it better to just AVOID Mexican food altogether.
