I have been pretty much of a slug for the last 24 hours while trying to rest up from all the holiday hustle and bustle. It seems as if every time I sit down at the computer I nod off into dreamland rather than accomplishing any thing. However I have managed to pull together a little some-some for today. Today is pay day which means chores and errands, of course, among other things.
While I was making the weekly menu/grocery list, I was trying to come up with something a little different than my standard rotating fare. If you are tired of turkey/ham/holiday leftovers, here are two variations on a taco casserole theme you might want to try: Taco Bake or Easy Layered Taco Bake, both recipes are from Kraft Kitchens. If you are up for something a little more ambitious then you might want to try this Lazy Man Enchilada recipe from the Cooking with Jack Show on You Tube. I made the half version of this delicious recipe and still had more than enough to feed Will & I, some neighbors plus the guys and girls at work, who all loved it. I also made copies of the recipe to pass around to them after getting requests for the recipe from everyone who tried it.
I will get the chores and errands done today then try once again to catch up on my feeds (seems like a constant battle a lot of the time). Then we will see what we come up with for tomorrow's post.
