An Experiment Sparks An Great Idea!

Over the weekend while looking through the latest videos in my You Tube Subscription In Box, I ran across a video from the Cooking With Jack Show.  A viewer had sent Jack a recipe for Jalapeno Bacon Deviled Eggs that I thought I would try.  I knew I liked Deviled Eggs, bacon and jalapenos,  and I knew my working buddy has an orgasm just thinking about Deviled Eggs, so I had the inspiration to try my hand at them.  I had never before made Deviled Eggs although I have eaten my fair share at holiday gatherings.  When I went to gather the ingredients listed in the video, I found I did not have the exact items for which the recipe called.  Necessity being the Mother of Invention, I began to think of what would be suitable substitutes that happened to be on hand to end up with basically the same thing.  

Thus this recipe for Tio Geraldo's Huevos Diablos (Uncle Gerry's Eggs Diablo) was born in my fertile little porn factory of a mind.  I took 18 Jumbo Eggs, 3 parts Miracle Whip Salad Dressing, 2 parts Whataburger Brand Mustard*, 1 part Ranch Dressing, 8 Crispy Bacon Strips, crumbled and 2 medium sized jalapeno peppers (one red and one green for some added color) finely chopped.  I boiled and shelled the eggs, sliced them in half and removed the yolks into my big mixing bowl.  I mashed the yolks with a fork, then stirred in the other ingredients until well mixed and stiffly creamy.  I laid the half shell egg whites out on a work tray, then spooned the blended ingredients into the depressions left when removing the yolks.  The filling can be more decorative if you use a pastry bag with a fancy nozzle, but alas I have none.  I then sprinkled paprika gently across the top before placing them on a serving tray  

I took some to work on Sunday from the first batch of 6 eggs I made as an experiment.  While at work one of my customers, a caterer and another whose family runs the upscale Paris Coffee Shop in the Medical District came in before my buddy and I ate them all and both of them thought they were delicious.  The restauranteur wanted to test market them at the Paris, so I made a batch with the above recipe for test marketing today and tomorrow.  I had some tin foil cup cake cups into which I placed the individual half shells for easy sampling to the Paris' Patrons.  I also shared some with my neighbors as a mini taste test and they all thought they were the bomb.  I will let you know how things go at the Paris when I know. 

(*Whataburger is a TX chain of hamburger stands that is spread across the southern states.  They are a bit pricey but delicious.  They have their own mustard formula for sale which is what I used for the recipe above.  If you have never had a Whataburger, you have missed one of life's great experiences)
